In fact so obsessed are they about food, that the man of the house goes to the market daily to buy a fresh supply vegetables and fish which is a must in their daily menu. Another very important item of Bengali cuisine is the variety of sweets or mishti as they call them. Most of them are milk based and are prepared from Payesh. A meal, for the Bengali, is a ritual in itself. Bengalis spend not only the great deal of time thinking about the food but also on its preparation and eating.

Ingredients for Payesh Recipe

  • Payesh made from skimmed cow’s milk 1/2 cup
  • Skimmed milk (5 cups) 1 litre
  • Sugar 1/2 cup
  • Almonds blanched and chopped 5-6
  • Pistachios blanched and chopped 7-8

Method

Step 1
Boil milk, reduce heat and let it simmer till reduced to half the original quantity.
Step 2
Add sugar and cook till it dissolves.
Step 3
Mash chenna in a bowl. Add it to the milk. Simmer for two minutes.
Step 4
Garnish with nuts and serve cold.
